Rezept | Ein Klassiker neu interpretiert: Kasseler an buntem Gemüse

Hallo und herzlich Willkommen im Oktober!

Auch wenn ich keinen Kalender hätte, wüsste ich ganz genau, wann der Oktober und somit einer meiner Lieblingsmonate beginnt. Vögel sammeln sich auf Stromleitungen für ihren Flug in den Süden, Kürbisse leuchten im Garten und auf den Äckern in den schönsten Farben. Morgens wallen graue Nebelschwaden über die Felder und die Blätter der Bäume färben sich langsam ein. Nicht umsonst wird der Oktober auch „goldener Monat“ genannt. Vor allem die Auswahl an heimischem Gemüse und Obst ist in dieser Jahreszeit überaus reichlich. Wenn es kälter wird, kommen wieder Omas Klassiker auf den Tisch. Sauerkraut und Co. hat jetzt Saison. Ich habe mich mal an ein kleines Experiment gewagt. Ob es meiner Oma geschmeckt hätte, werde ich nie erfahren aber uns hat es auf jedenfall sehr gut gemundet. Ein Klassiker neu interpretiert: Kasseler an buntem Gemüse.

Traditionsreiche Kasselerküche

Kasseler ist eine typisch deutsche Spezialität. Das Pökelfleisch vom Schwein mit Sauerkraut ist ein Klassiker und überall in Deutschland bekannt. Allerdings gibt es sehr wohl regionale Unterschiede.

Norden – Grünkohl und Kartoffeln mit herzaftem Kasseler schmeckt den Bewohnern des hohen Nordens besonders gut. Das vitaminreiche Kohlgemüse ist aber auch im Rest des Landes im Winter sehr belibet.

Osten – Kasseler stammt entgegen vieler Annahmen nicht aus Hessen, sondern aus Berlin. Im Osten wird der Klassiker aus Kasselerbraten, Sauerkraut und Kartoffelpüree besonders gern serviert.

Westen – Ein warmer, deftiger Eintops war und ist im Westen des Landes ein leckers Alltagsessen für die ganze Familie. Besonders lecker schmeckt ein Porree-Kartoffel-Topf mit viel Kasseler.

Süden – Auch in Bayern hat ein Kasselerbraten Tradition. Besonders lecker schmeckt er mti Weißkraut und Semmelknödel.

Nun wird der Klassiker in die moderne Zeit übertragen. Hier kommt mein Rezept für einen leichten, vitaminreichen aber dennoch deftigen Kasselerbraten.

Kasseler an buntem Gemüse

Ein Klassiker neu interpretiert

Das-wird-benötigt

  • 1,5 kg Kasseler mit Knochen
  • Olivenöl
  • Pfeffer, Salz, Knoblauch
  • 600 g kleine Kartoffeln
  • 2 Karotten
  • 4 Schalotten (oder Lauch/Zwiebeln)
  • 250 g braune Champignons
  • 2 kleine Paprika
  • 1 Aubergine
  • 1 Zucchini

Arbeitsschritte

Backofen auf 200 °C Ober-/Unterhitze vorheizen. Kasseler trocken tupfen, mit Olivenöl einreiben und mit Pfeffer würzen. Schwarten kreuzförmig einschneiden. Fleisch in eine Auflaufform geben und für 60 Minuten im Ofen garen.

Kartoffeln und Gemüse waschen, schälen und in kleine Würfel schneiden. In einer Schüssel mit etwas Olivenöl, Salz und Pfeffer vermengen.

Nach den 60 minuten das Gemüse in die Auflaufform zum Kasseler geben und weiter 30 minuten garen.

Kasseler und Gemüse aus de Ofen nehmen und heiß servieren. Guten Appetit!
